Hollandaise Sauce

Ingredients
4 ounces unsalted butter room temperature, cut into 8 pieces
2 egg yolk
1 ¹/₂ tablespoons water cold
1 ¹/₂ tablespoons lemon juice freshly squeezed
¹/₈ teaspoon salt
¹/₈ white pepper or a dash of tabasco sauce
Directions
Add the yolks, lemon, salt, and pepper to a glass bowl (heat resistant) and away from the heat. Whisk until smooth and slightly thicken.
Place the bowl over a slightly simmering water pot. Keep whisking for some seconds until the mixture is warm. Start adding a cube of butter, one at a time, waiting for each to be fully incorporated.
Remove pan from heat once all butter is in. Check for salt, pepper, lemon, etc. Add the teaspoons of water to make it less thick.
