Hollandaise Sauce

Ingredients

  • 4 ounces unsalted butter room temperature, cut into 8 pieces

  • 2 egg yolk

  • 1 ¹/₂ tablespoons water cold

  • 1 ¹/₂ tablespoons lemon juice freshly squeezed

  • ¹/₈ teaspoon salt

  • ¹/₈ white pepper or a dash of tabasco sauce

Directions

  • Add the yolks, lemon, salt, and pepper to a glass bowl (heat resistant) and away from the heat. Whisk until smooth and slightly thicken.

  • Place the bowl over a slightly simmering water pot. Keep whisking for some seconds until the mixture is warm. Start adding a cube of butter, one at a time, waiting for each to be fully incorporated.

  • Remove pan from heat once all butter is in. Check for salt, pepper, lemon, etc. Add the teaspoons of water to make it less thick.
